What Panamanians like is a good soup. In our culture, soups are always present in those moments when we need to pamper ourselves or hug our hearts, after a good holiday, if we feel a little bad, in short, hundreds of opportunities where we feel like having a soup full of flavor and energy, we want to please them, that is why we have prepared the GREAT SOPON directly prepared by Chef Isaac and his brilliant kitchen team.
During these days of quarantine we know that we have not been able to share with you from our restaurant as we would like, we love having you in our house and that you enjoy our Afro-Panamanian atmosphere that makes us so happy, but despite these circumstances we wanted to include in our menu a recipe that would allow us to hug you and fill your hearts with love, we thought that the perfect dish would be a good Panamanian sopón, very good with white rice. This soup is exclusive to Mondays and Chef Isaac starts the process at 9:00 pm on Sunday when the entire team has gone to rest, Isaac looks for his best knife and sets up the largest pot, because what comes down is buco flow and flavor. The sopón is made with beef ribs, shank, pig tail, yam, corn, green plantain, and dumplings. The cooking process takes approximately 12 hours, this allows it to reach the perfect flavor, thickness / texture of a great Panamanian sopón. We accompany it with white rice and a very ripe slice.
